Ari Payasam - Red Rice Dessert

Traditionally the rice used for this payasam was a local variety called adhikarazi nellu which has a red tinge.Since it was hand-milled without parboiling the bran improved the tone of the red tinge even further.South Indian shops sometimes stock this rice.However,a passable payasam can also be made with ordinary rice.

250gms red rice

4 litres milk

100 gms unsalted butter

2 1/2 cups sugar

Method of Preparation

  • Wash rice,drain and place in a pan with 1 litre milk and 2 liters water,and cook till half done.
  • Add butter and cook,stirring constantly,for 5 minutes.
  • Add sugar and keep stirring till dissolved
  • Stir in remaining milk and cook till it thicknes,stirring occasionally.The consistency should be that of a thin porridge.
  • Remove from heat and serve hot.

Note: You can cook the rice with 1 litre water in a pressure cooker for 15 minutes and continue as given.Add alll the milk after dissolving sugar.
