Chakkakuru Thoran - Stir-fried Jackfruit Seeds with Coconut

Ingredients

Serves:4

250 gms jackfruit seeds

11/2 tbsp coconut oil

1 tsp mustard seeds

1 shallout,chopped

1 stalk curry leaves

1 tsp salt

Ground to a fine paste:

1/2 medium-sized,fresh coconut,grated

5 shallots,chopped

6 green chillies,chopped

A pinch of cumin seeds

1/2 tsp turmeric powder

Method of Preparation

  • Peel jackfruit seeds.Clean and cut into 1-cm pieces.
  • Heat oil in a pan and sprinkle in mustard seeds.When they start sputtering,add shallot and curry leaves,and fry till shallots turns brown.
  • Stir in coconut paste and fry,stirring frequently,for 2 minutes.
  • Mix in jackfruit seeds,salt and 3/4 cup water.Cover pan and cook over low heat for 15 minutes.
  • Open pan and stir-fry till dry.
