Chembu Mezhukkupuratti - Stir Fried Colocasia

Ingredients of Chembu Mezhukkupuratti

Serves: 6

150 gms colocasia(arbi)

2 tbsp oil

1 tsp mustard seeds

6 shallots, chopped

1 stalk curry leaves

1 tsp red chilli powder

½ tsp turmeric powder

½ tsp black pepper powder

1 tsp salt

Method of Preparation of Chembu Mezhukkupuratti

  • Peel colocasia, wash and cut into thin, 3-cm long slices.
  • Heat oil in a kadhai and sprinkle in mustard seeds. When they start sputtering, add shallots and curry leaves, and fry till shallots turn brown.
  • Sprinkle in spice powders and salt, and stir in colocasia.
  • Pour in ½ cup water, cover kadhai and cook over low heat for 15 minutes.
  • Open kadhai and stir-fry till dry.

Variations: Elephant foot yam (zimikand) and green plantain, together or individually can be substituted for colocasia.
