Madhura Kozhukkatta - Rice Dumplings with Coconut and Jaggery

Ingredients

Serves: 12

1kg parboiled rice

1 tbsp ghee

1 medium-sized,fresh coconut,grated

Syrup made from 1 kg jaggery

Method of Preparation

  • Wash rice and soak in water for 3 hours.Drain and grind with 1 1/2 cups water to a thick paste.
  • Heat ghee in a pan,add coconut and jaggery syrup,and cook,stirring constantly,till dry.
  • Allow to cool,pinch off lime-sized portions of rice paste and flatten it in tour palm.Put 2 tbsp coconut-jaggery mixture in the centre,and work paste around to cover filling completely.Shape into round dumplings.
  • Steam dumplings for 10 minutes.
