Muringayila Thoran - Stir-fried Drumstick Leaves with Coconut

Ingredients

Serves:4

250gms drumstick leaves

11/2 tbsp coconut oil

1 tsp mustard seeds

1 tsp rice

2 shallots,chopped

1 tsp salt

Ground to a coarse paste:

1/2 medium-sized,fresh coconut,grated

4 shallots,chopped

6 dry red chillies,torn into pieces

A pinch of cumin seeds

1/2 tsp turmeric powder

Method of Preparation

  • Clean and wash drumstick leaves and drain.
  • Heat oil in a pan and sprinkle in mustard seeds and rice.When mustard seeds start sputtering,add shallots and fry till brown.
  • Stir in coconut paste and fry for 2 minutes.Mix in drumstick leaves and salt.Press down with a spatula,cover pan an cook over low heat for a minute.
  • Open pan and stir-fry till dry.
  • Variations:Drumstick flowers can be used instead of the leaves.
  • Muringakai Thoran (Stir-fried Drumsticks with Coconut):Scrape out the inner portion of 10 drumsticks and use instead of leaves.Use 4 green chillies instead of red.Omit rice and fry 1 stalk curry leaves with shallots.
