Neypayasam - Rice and Ghee Dessert

Ingredients

Serves: 6

1 cup ghee

2 1/2 tbsp sultanas (kishmish)

2 1/2 tbsp unsalted,cashewnuts

200 gms red rice

Syrup made from 1 1/2 kg jaggery

1 litre coconut milk

50 gms sugar candy (misri)

Method of Preparation

  • Heat 1 tbsp ghee in a pan,add sultans and fry till they puff up.Remove from pan,drain and set aside.Add cashewnuts and fry till golden brown.Remove ghee in pan and set aside.
  • Wash rice,drain,place in a pan with 2 1/2 cups water and cook till half done.
  • Add jaggery syrup and remaining ghee,and fry,stirring constantly till completely dry.
  • Mix in coconut milk,sugar candy and reserved sultanas,cashewnuts and ghee,and cook till payasam thickens.The consistency should be that of a thick porridge.
  • Serve warm.
