Ingredients of Tharavumutta Thoran

Serves: 6

This is a popular form of preparing eggs in Kerala.It is generally served with rice when fish and meat are not available.It can also be made with chicken eggs.

1 1/2 tbsp oil

1 tsp mustard seeds

2 shallots,chopped

1 stalk curry leaves

1 tsp salt

6 ducks' eggs,well beaten

Ground to a fine paste:

1/2 medium-sized,fresh coconut,grated

4 shallots,chopped

5 green chillies,chopped

A pinch of cumin seeds

1/2 tsp turmeric powder

Method of Preparation of Tharavumutta Thoran

  • Heat oil in a pan and sprinkle in mustard seeds.When they start sputtering,add shallots and curry leaves,and fry till shallots turn brown.
  • Lower heat,add coconut paste and salt,and fry for 2 minutes.
  • Pour in eggs and stir continuously over low heat till scrambled and dry.
  • Serve immediately with rice.
  • Variation: This dish can also be prepared with chicken eggs,or a as an omelette on a tava or griddle.
