Ingredients of Thenga Chammanthi Podi

Makes: 250 gms

1 tsp coconut oil

1 medium-sized,fresh coconut,grated

10 shallots,chopped

12 dry red chillies,torn into pieces

3-cm piece ginger,chopped

2 stalk curry leaves

2 lime leaves,torn into pieces

10 black peppercorns

1 tsp coriander powder

A walnut-sized ball of seedless tamarind

A pinch of asafoetida powder (hing)

2 tsp salt

Method of Preparation of Thenga Chammanthi Podi

  • Heat oil in a frying pan,add coconut,shallots and red chillies,and fry,stirring constantly,till coconut turns brown.
  • Add ginger,curry leaves,lime leaves,peppercorns and coriander powder,and continue to fry till coriander powder,and continue to fry till coriander powder releases its aroma.
  • Cool and mix in tamarind,asafoetida and salt.
  • Grind to a fine powder and store in a dry bottle.
