Unniappam - Fried Banana and Rice Sweet

Unniappam is often used as a ritual offering in temples dedicated to Krishna (generally represented as a child) in Kerala.The size of the unniappam are considerably smaller when made in temples.

The banana used for this dish is a local variety called palayankodan.It is short,yellow skinned and has a sweet-sour taste.Unniappam are made in a cast iron mould called an appakara.Each appakara generally has moulds to accommodate 4 unniappam.

150 gms ripe table bananas

Syrup made from 150 gms jaggery

250 gms rice flour

1 tsp cumin powder

1 tsp ginger powder (saunth)

1/2 tsp salt

2 1/2 cups oil

Method of Preparation

  • Peel bananas and mash to a smooth paste.Add jaggery syrup,rice flour,cumin,ginger,salt and 2 tbsp water,and mix well to form a smooth batter.
  • Heat an appam mould (appakara) and pour in oil.When oil reaches smoking point,pour 1 tbsp batter into each mould and deep fry.
